Enco Products' parent company Grace Foods UK has been crowned the 'Best Caribbean Food and Drink Company of the Year' by Caribbean World magazine and its annual International Caribbean World awards.

The prestigious award has been given to Grace after readers of Caribbean World voted for the company that they wanted to receive the title.

The International Caribbean World awards have been running for 14 years and are now seen as the 'Oscars of the Caribbean'.

"We are delighted to receive such a prestigious award and I would like to thank all of the readers of Caribbean World for supporting Grace and honouring us with this title", says George Phillips, Enco Products' Commercial Director.

Brunswick sardines will be on the menu at an off licence in the Midlands soon, thanks to a shopkeeper’s success in a competition run by the leading trade magazine, Asian Trader.

S Singh, who runs the Coppice Lane Off Licence and Store in Willenhall, near Coventry, has won a day’s sampling and a full sampling team, courtesy of Enco Products.

A date has yet to be finalised, but watch this space. If you want to lift the lid on the great taste of Brunswick Sardines, and you live in the Midlands, then this is a sampling day not to be missed.

The Brunswick range includes four great-tasting varieties - Hot Tabasco Peppers, Louisiana Hot Sauce, Soya Oil or Tomato Sauce - and they’re all packed with nutritional benefits.

In a medium size stock pot, stir fry chicken pieces, seasoning and butternut squash for 10 - 15 mins. Add boiling water bring level to half. Bring water to a boil leave on a medium flame for 30 minutes.

Peel the skins off the yellow yam and potatoes and wash these root vegetables in cold water to remove the dirt. Cut each vegetable into four slices and then add them to the pot.

You can add spinners (small dumplings) to the soup at this time if you wish. (Flour, salt and water to form a dough - this should not be sticky) The heat should be turned to high at this point. Boil for 15 minutes.

Now you can add the rest of the ingredients to the pot, turn the fire down to medium, and cook for another 10 minutes. Then simmer for another 5 minutes.

Check the yellow yam to make sure it is soft. If not, cook until it becomes soft but not mushy.

 

hints: 

You can speed up the time to prepare this Jamaican style chicken soup by slicing the yellow yam in thin slices.

Wash pork chops and dry slightly. Combine garlic and soy sauce with Tex's Jamaican Jerk Seasoning.

Rub mixture into the pork and marinate for 2 hours overnight in the fridge. Grill the chops over a hot charcoal fire or under a hot grill until cooked through and the juices run clear when pierced. Oven baking recommended.

Chicken can be used instead of pork chops.

2. Pour over crushed ice.

3. Decorate with a pineapple wedge, an orange slice and a cherry on top.
